On the menu today

On the menu today:

Chocolate Cream Pie

Ingredients:
3/4 cup of white sugar
1/3 cup of all purpose flour
2 cups of milk
2 1 ounce squares of unsweetened baking chocolate, chopped
3 egg yolks
2 teaspoons of butter
1 teaspoon of vanilla

Combine sugar, flour, milk and chopped up chocolate in a small saucepan.  Stirring constantly, cook over medium heat until mixture begins to bubble.  Continue stirring for two minutes.

Mix a little of the hot mixture into the egg yolks, beating rapidly to avoid cooking the yolks.  Stir the warm yolks into the remainder of the chocolate mixture and cook for another 90 seconds.  Remove from heat and stir in butter and vanilla.

Pour filling into a prebaked, 9 inch pie shell and chill until set.  Top with whipped topping* and grated chocolate.

*I usually pipe on cool whip with a piping bag, but you can just spoon it on evenly over the top or use the aerosol variety.
