On the menu today

On the menu today:

Justme's Mexicalli Rice

Ingredients:
1 C uncooked white rice
1 pound bacon
2 cans stewed tomatos
2 tsp. chili powder
1 tsp. cumin
8 oz. cheddar cheese, grated
salt/pepper to taste

(She's not good at cooking rice mixed in with other stuff..so she "cheats" and cooks her
rice in a seperate pan...till tender.)

While the rice is cooking. In seperate pan, cut bacon in 1" squares..cook till
just done..drain off excess fat...but leave drippings. To that pan add the
tomatos and spices. When rice is done..combine all together and mix well. Toss
in cheese and simmer till all cheese is melted. Very yummy...(Her kids love this.)
Excellent served with flour tortillas....

Her tips: don't skimp on the bacon & cheese...get the good stuff. Most especially
the bacon!

She also loves to use one can rotel tomotoes and one can stewed tomatos
instead...very good..and then don't even bother with the extra spices..it is
done for you!
